For 8 years Simon has built a reputation for amazing food at The Glenview that has earned the respect of 2 rosettes.
Simon’s passion for pies has led to a new venture being launched as part of The Glenview enterprise.
If you have stayed or dined with us before you will know we are all about local and organic food here – on Skye we are blessed with a huge network of local growers and producers who we support and celebrate daily with our food. It us amazing what can be wrapped in a pie crust and Simon is currently perfecting our lobster & crab pie using local lobster caught in Staffin Bay – a stones throw away from the café.
The first ever culinary memory that Simon has is making mince pies with his Mum at Christmas time; making the pastry from scratch is a great family tradition and one that has stayed with Simon ever since. All the pies at Skye Pie Café are encased in Simons pastry made by himself, rolled by himself and cooked by himself – taste the love in that!
Our new exciting Skye Pie adventure is a family decision. The last 7 years at Glenview have been our first chapter – working evenings when the boys were tots worked really well but now we are at chapter 2 – our family needs have changed and we need to react accordingly. Working in the day means we don’t have to compromise any of our passions for food, flavour, customers, guests, the works!! And hopefully some home work will finally get done in the evenings!
